When planning weekly household dinners, my plan is to find healthy 30-minute meals so I can spend the evenings relaxing instead of cooking up a storm after a long day. However, it seems that you always have to thoroughly vet any recipes that promise a quick result. So many end up taking over an hour when all is said and done! Or, they call for specific ingredients that I don’t always have on hand and at the ready.
Lucky for you, I’ve done the vetting for you and found some amazing options. Keep reading for my favorite quick mid week dinner recipes that truly come together in 30 minutes or less, and call for ingredients that you’ll use in other dishes all week long.
Quick Asparagus, Eggs, and French Dressing Salad
I love this salad for so many reasons. It’s richly flavored for how few ingredients it requires, it comes together with no fuss, and it’s a refreshing change of pace without sacrificing protein (anyone else get tired of chicken breasts??)

Easy Cauliflower Tacos
Tacos are a household favorite, and these cauliflower tacos make taco night as simple as possible! The most time-consuming thing is easy – roasting the cauliflower. Everything else is a breeze. It’s one of those quick mid week dinner recipes that’s easy to turn to week after week!
For an even quicker (but still just as delicious!) option, I recommend replacing the chipotle romesco sauce with store-bought Chipotle Bitchin Sauce from Whole Foods, Target, or Safeway. It’s delicious, vegan, and it’s great to have on hand for snacking on fresh veggies and pita chips throughout the week.
Bonus points for pickling your own red onions – they last for weeks in the fridge and are perfect for topping these tacos and so many other dishes.
Spiced Salmon and Yogurt Wraps
Slicing salmon into small chunks, coating them in spices, and roasting them at a high temperature results in a quick cook time and super flavorful end result. I set my oven to 475 degrees – but instead of baking, you can also opt to pop a whole filet on the grill for a beautiful char.
I love serving these easy wraps with a side of hummus and sliced cucumber. Substitute chicken breasts if you have picky kiddos!
Fast Easy Spring Veggie Pasta
This pasta is loaded with fresh spring veggies and is one of those fast, easy dinner recipes that uses whatever you have on hand. In addition to the asparagus, radishes, and peas that the recipe calls for, I’ve made do with roasted mushrooms, broccolini, cauliflower, and even carrots. Really, any vegetable you’re craving (or need to use up!) will do. Roasted chickpeas go great in this, too.
Quick Mid Week Bison Burger Recipe
Why bother with fast food? These burgers are delicious and come together in the same amount of time as you’d spend waiting in a drive-thru line! Lean bison burgers are a great weeknight option for cranky, hungry kids. Pair with some baked or air-fried sweet potato fries and you’ve got the most decadent healthy weeknight dinners.
