I have partnered with Annie’s Homegrown, The Feedfeed and Natural Grocers to bring you my spin on a Spicy Soba Noodle Salad made with Annie’s Organic Asian Sesame Dressing. You may recognize Annie’s Homegrown as the brand behind your kids’ favorite organic bunny fruit snacks and shells and cheese, but did you know about their tasty salad dressings? There are over 24 salad dressing flavors that are certified organic, non-GMO, made with expeller pressed oil and no artificial flavors, colors or preservatives.
The Feedfeed, a phenomenal on-line community connecting food lovers and cooks, has been my go-to for recipes and inspiration. Not only do I love perusing the website for ideas on feeding my family of five, I also subscribe to Feedfeed’s weekly vegan meal planner to keep my dietary restrictions covered. When the company reached out to ask if I would be interested in developing a recipe using one of Annie’s Homegrown dressings, I jumped at the opportunity.
This Spicy Soba Noodle Salad made with Annie’s Organic Asian Sesame Dressing can be made in under 30 minutes and served as a main course or a side dish. Heart healthy and vegetarian, this cold noodle salad is made with ingredients that are easy to find, like carrots, sugar snap peas and green onions. And don’t feel you have to stick just to these specific veggies! Remember that when cooking, a recipe is a guide and you should use what you have on hand or the products you love.
When shopping for these products, if you haven’t been to a Natural Grocers yet, I suggest you put it on your list. A Colorado-based health food chain, Natural Grocers offers 100% organic produce, pasture-based dairy, free-range eggs and humanely-raised meats. Natural Grocers also has one of the largest selections of Annie’s Dressings that I have found in the Phoenix valley, and I chose the organic sesame as the perfect accompaniment to the soba noodle salad. Spicy Soba Noodle Salad with Annie’s Organic Asian Sesame Dressing
Ingredients
- 1 12 oz. package of soba noodles, cooked according to instructions on package and drained.
- 1 carrot, peeled and shredded.
- 1/4 cup cilantro, minced.
- 1/4 cup basil, chiffonade.
- 1/8 cup mint, chiffonade.
- 1 inch fresh ginger, minced or grated fine.
- 1/4 cup green onions, cut on the bias.
- 1/4 cup sugar snap peas, cut on the bias.
- 1/4 cup red cabbage, thinly sliced.
- 1 tbsp sambal olek (Indonesian chili paste). Can substitute diced jalapeños.
- 1 8 oz. bottle of Annie's Organic Asian Sesame Dressing.
- Fresh lime juice, to taste.
- Salt to taste.
- 1 tbsp sesame seeds, toasted.
Instructions
- Place cooked and drained noodles in a large salad bowl. Add chopped herbs and vegetables, chili pasteand Annie’s Asian Organic Sesame Dressing. Season with salt and lime juice to taste, and mix well. Top with sesame seeds.
- The Spicy Soba Noodle Salad can be prepared a day ahead oftime and stored in the refrigerator for up to three days.
